Round Masa Cakes
1 1/3 Cups Masa Harina
2/3 Cup Whole Wheat Flour
1 Tbsp. Baking Powder
Salt Substitute (sprinkling)
1/4 Cup Canola Oil
1 Cup Chicken Broth (maybe more)
Pre-heat oven to 450 degrees F. Stir together masa harina, whole wheat flour, baking powder, and salt substitute. Add oil and enough broth to make the dough a consistency that's easy to work with (start with 1 Cup and add more if you like) - stir.
Turn onto a lightly floured surface. Knead gently 10 to 12 times. Roll or pat dough 1/2 inch thick and cut with the mouth of a sturdy drinking glass. (Or... If you are lazy like me, just roll out the dough on the cookie sheet and run the pizza cutter through it.)
Place on ungreased baking sheet and bake for 10 to 12 minutes or until golden brown.
Note: These cakes can be served as part of a meal or given as a treat.

Banana Masa Pancakes
1 Cup Masa Harina
1/2 tsp Baking Soda
1/2 tsp Salt Substitute
2 1/4 Cups Water
2 tsp Lemon Juice (added to the water)
1 small Banana, sliced in thin circles or half-circles
In a medium bowl, mix together masa, baking powder, and salt substitute. Stir 2 cups of the lemon water into the masa, to make a medium-thin batter. Set aside for a few minutes.
Place a large (10 to 12 inch) skillet, lightly coated with non-stick spray, over medium heat. Stir the masa batter. The batter should pour easily from a spoon. If it does not, add the remaining 1/4 cup of water. Slice the banana into the batter and mix. To make the masa cakes, pour about 1/2 cup of batter into the middle of the heated skillet and swirl it outward with the back of a metal spoon to make a cake that is 8 or more inches in diameter. Cover the pan and cook until the top of the cake is dry, about five minutes. Flip the cake and continue cooking until it is cooked through, about another five minutes. The cake will be slightly puffy and browned on both sides. Remove the masa cake to a plate to cool before serving.
Note: These cakes are like thin pancakes and are not suitable for use as training treats. I serve them as part of a meal or they could simply be fed on their own as a treat. They should be fed as soon as they are cool, not stored for future use.
